What if I told you that you can whip up a batch of delicious peanut butter cookies with just five simple ingredients? Yes, you heard it right! These 5-Ingredient Peanut Butter Cookies are the epitome of baking simplicity and pure delight.

Ingredients
  

  • 1 large egg
  • 1 cup creamy peanut butter
  • 1/2 cup coconut sugar (can sub brown sugar)
  • 2 tbsp butter (can sub coconut oil however these do tend to make them extra crumbly)
  • 1 tsp vanilla extract

Optional: can add in chia seeds, dash of cinnamon, or chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine all ingredients in a bowl and whisk together. Depending upon the type of peanut butter you use, you will see the best results with a peanut butter that isn't so hard to spread.
  • Drop your deserved tablespoon size onto a greased pan or parchment paper. Makes about 8-10 cookies depending on the size you want them.
  • Use a fork to flatten each cookie slightly and create a crisscross pattern on top.
  • Bake in the preheated oven for about 10-12 minutes or until the cookies are just set and the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Optional: Melt chocolate chips with a little coconut oil in a bowl in 30 second increments and drizzle on top
